Our protein-packed black and white lemon cookies are not only delicious but also a nutritious addition to your snack repertoire. Packed with vanilla Lean Whey protein, coconut flour, and a hint of lemon and chocolate, these cookies are a delightful combination of flavors. Plus, the icing adds an extra layer of sweetness and protein, making them a perfect post-workout snack or a wholesome dessert alternative.

Ingredients:

¼ cup Musclesport Vanilla Ice Cream Lean Whey protein (24g)

1 tablespoon coconut flour (7g)

1 ¼ teaspoons water

¼ teaspoon alcohol-free vanilla extract

¼ teaspoon alcohol-free lemon extract

¼ teaspoon baking powder

A pinch of sea salt

Icing:

2 tablespoons Musclesport Vanilla Ice Cream Lean whey protein powder (11g)

2 tablespoons Musclesport Lean Whey Chocolate Ice Cream protein (13g)

4 teaspoons water (separated)

2 packets stevia (separated)

Preheat the Oven:

Preheat your oven to 325°F (163°C).

Mix the Cookie Batter:

In a bowl, combine the natural vanilla whey protein, coconut flour, water, vanilla extract, lemon extract, baking powder, and a pinch of sea salt. Mix until well combined. If the batter is too thick, you can add more water by the ¼ teaspoon.

Shape and Bake:

Spoon the cookie batter onto a parchment-lined cookie sheet, shaping them into circles. Bake for 5 minutes, checking for firmness. Avoid over-baking; remove the cookies as soon as they are firm. Let them cool.

Prepare the Icing:

In separate bowls, place vanilla and chocolate whey protein powder. Add 1½ packets of stevia to the unflavored and ½ packet to the chocolate. Add 2 teaspoons of filtered water to each and mix well. Adjust the water if needed to achieve a spreadable consistency.

Ice the Cookies:

Turn the cookies over to ice the bottom (flat side) of each cookie. Ice half of each cookie with the white icing and the other half with the chocolate icing.

Enjoy and Store:

Once iced, these cookies are ready to be enjoyed! For best results, store them in the refrigerator.

Notes:

Protein Powder Substitutions: Avoid substituting different types of protein powders, as each has a distinct flavor and texture when baked.

Stevia Selection: Use a good-quality stevia for optimal taste. Next Step stevia is recommended.

Water Amount for Icing: Adjust the water quantity based on the whey protein used; some powders may require more liquid.

Icing Stiffening: The icing may stiffen over time, so it's best to prepare it just before you're ready to ice the cooled cookies.
