Apple Whey Protein Pie

This Whey Protein Packed Apple Pie is a delicious and healthier take on a classic dessert, packed with protein and the delightful flavor of apples. Enjoy!

Ingredients:

For the Crust:

  • 1 1/2 cups oat flour (or finely ground oats)
  • 1/4 cup coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon salt

For the Filling:

  • 5-6 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 1/4 cup Lean Whey Apple Pie
  • 1/4 cup honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1 tablespoon cornstarch or arrowroot powder

For the Topping (optional):

  • 1 tablespoon oat flour
  • 1 tablespoon rolled oats
  • 1 tablespoon coconut sugar or brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cold coconut oil, cut into small pieces

Instructions:

  1. Prepare the Crust:

    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the oat flour and salt.
    • Add the melted coconut oil and honey or maple syrup. Mix until the dough comes together.
    • Press the dough into the bottom and up the sides of a 9-inch pie dish.
    • Bake the crust for 10 minutes, then set aside to cool.
  2. Prepare the Filling:

    • In a large bowl, combine the sliced apples, whey protein powder, honey or maple syrup, lemon juice, cinnamon, nutmeg, allspice, and cornstarch. Toss to coat the apples evenly.
  3. Assemble the Pie:

    • Pour the apple filling into the pre-baked crust, spreading it out evenly.
  4. Optional Topping:

    • In a small bowl, combine the oat flour, rolled oats, coconut sugar, and cinnamon.
    • Add the cold coconut oil and mix until the mixture resembles coarse crumbs.
    • Sprinkle the topping over the apple filling.
  5. Bake the Pie:

    • Bake the pie in the preheated oven for 40-45 minutes, or until the apples are tender and the topping is golden brown.
    • Allow the pie to cool for at least 30 minutes before serving.
  6. Serve and Enjoy:

    • Slice the pie and serve as is or with a dollop of Greek yogurt or a scoop of vanilla ice cream for an extra treat.
