Ingredients:
For the Baklava:
- 1 cup shelled pistachios, finely chopped
- 1 cup unsalted butter, melted
- 1 package of phyllo dough (about 16 ounces), thawed
- 1 cup honey
- 1 cup water
- 1 tablespoon lemon juice
- 1 scoop Lean Whey Pistachio Ice Cream
Instructions:

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with melted butter.

In a bowl, mix together the finely chopped pistachios and Pistachio Whey Protein Powder.

Unroll the phyllo dough and cut it to fit your baking dish. Cover the dough with a damp towel to prevent it from drying out while you work.

Place a sheet of phyllo dough in the bottom of the prepared baking dish and brush it generously with melted butter. Repeat this process, layering about 8 sheets of phyllo dough, brushing each layer with butter.

Sprinkle a generous layer of the pistachio and protein powder mixture evenly over the phyllo dough.

Continue layering the phyllo dough sheets on top of the pistachio mixture, brushing each layer with butter as before. Repeat until all the phyllo dough and pistachio mixture are used.

Using a sharp knife, carefully cut the baklava into diamond or square shapes.

Bake in the preheated oven for 45-50 minutes, or until the baklava is golden brown and crisp.

While the baklava is baking, combine the honey, water, and lemon juice in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes.

Once the baklava is finished baking, remove it from the oven and immediately pour the hot honey syrup over the hot baklava. Allow the baklava to cool completely before serving.
