  1. Prepare the Dry Ingredients: In a large mixing bowl, combine the blended oats, protein powder, salt, and cinnamon. Mix well to evenly distribute the dry ingredients.

  2. Combine Wet Ingredients: In a separate microwave-safe bowl, mix peanut butter and honey. Microwave for about 15-20 seconds, until softened and easily mixable. Stir to combine smoothly.

  3. Add Wet to Dry: Pour the peanut butter and honey mixture into the bowl with the dry ingredients. Add a small splash of almond milk and mix until everything is well combined. The mixture should be sticky but firm enough to hold together.

  4. Melt Chocolate: In a small bowl, combine chocolate chips and coconut oil. Microwave in 10-second intervals, stirring in between until the chocolate is melted and smooth.

  5. Assemble and Chill: Press the oat mixture into a lined 8x8-inch pan, spreading evenly to create a uniform layer. Pour the melted chocolate over the top, spreading it with a spatula.

  6. Set and Slice: Place the pan in the fridge for at least an hour to set. Once firm, slice into 7 bars.

  7. Enjoy: These bars are best stored in the fridge in an airtight container and can be enjoyed for up to a week
