These Pumpkin Spice Protein Pancakes are a perfect fall-inspired breakfast or post-workout meal, packed with flavor and protein to fuel your day! The combination of pumpkin purée and cinnamon adds a cozy touch, while the MuscleSport Lean Whey Pumpkin Spice flavor ensures you’re getting the protein you need without sacrificing taste.
Ingredients:
- 1 scoop MuscleSport Lean Whey Protein (Pumpkin Spice flavor)
- 230 g egg whites (about 25g protein)
- 1 small scoop pumpkin purée
- 4 g baking soda
- Cinnamon to taste
- Sugar-free maple syrup (optional, for topping)
Instructions:
-
In a blender or mixing bowl, combine the following ingredients:
- 1 scoop of MuscleSport Lean Whey Protein (Pumpkin Spice flavor)
- 230 grams of egg whites (equivalent to about 25 grams of protein)
- 1 small scoop of pumpkin purée (for extra pumpkin flavor and moisture)
- 4 grams of baking soda (to help the pancakes rise and become fluffy)
- A generous sprinkle of cinnamon (adjust according to your taste preferences)
-
Blend the ingredients until the mixture is smooth and well combined. You want a batter consistency, so if it's too thick, you can add a little water or almond milk to thin it out slightly.
-
Preheat a non-stick skillet or griddle over medium heat. Lightly spray with non-stick cooking spray if needed.
-
Once the skillet is heated, pour the batter onto the skillet to form pancakes. You can make them any size you prefer, but smaller pancakes tend to cook more evenly.
-
Cook for about 2-3 minutes on one side, or until bubbles start forming on the surface. Flip the pancakes and cook for another 1-2 minutes on the other side, or until golden brown and cooked through.
-
Remove the pancakes from the skillet and plate them up. Top with sugar-free maple syrup or your favorite toppings like fresh fruit, a dollop of Greek yogurt, or a sprinkle of nuts for added crunch and flavor.
